MARINATED LEMON HERB CHICKEN BREASTS
| 6 Boneless and Skinless Chicken Breasts | or | 2 lbs Chicken Strips |
| MARINADE: | ||
| 1/2 cup White Wine | 2 tbsp Granulated Garlic | |
| 1/4 cup Olive Oil | Juice from 2 Lemons | |
| 1/4 cup Fresh Parsley, Chopped | 2 Tbsp Vegetable or Chicken Stock | |
| 1/2 cup Mayonnaise |
Place chicken in pan and add all of marinade ingredients. Mix up well and allow to marinate for about 1 hour. You can marinate longer if you would like, just refrigerate entire pan covered with saran until ready to cook.
Cook in the stove in a teflon frying pan or grill over high heat, not turning often. You want a nice brown caramelized coating on the outside. If your pieces of chicken are really thick, lower heat and continue to cook until done; but do not cook until they are too dry!
