MARINATED LAMB KABOBS
| 2 lbs Lamb (Cut into 1"X1" Pieces) | 2 medium Zucchini (Cut into Chunks) | |
| 2 medium Onions, Cut into Chunks) | Red, Green or Yellow Bell Peppers | |
| 1 basket Fresh Button Mushrooms | (Cut into Chunks) | |
| MARINADE: | ||
| 1/2 cup Olive Oil | 1 Tbsp Dry Oregano | |
| 1/4 cup Dry White Wine | Salt and Pepper to Taste | |
| 1 tbsp Granulated Garlic |
Try to cut the chunks of your vegetables about the same size so that they will cook evenly. Place all the vegetables, mushrooms, and lamb in a shallow dish. Whisk together the marinade and pour over all. Cover with plastic wrap, refrigerate and allow to marinate for at least 4 hours, turning when you get a chance. You can marinate in refrigerator overnight.
Soak skewers in water for 1-2 hours. Pierce meat and vegetables onto skewer, alternating meat and vegetables. Grill over high heat until the lamb is cooked as you like. Use the juice from the marinade to baste while grilling. Be careful not to overcook or they will be dry. Enjoy!
