Cardune are artichoke stalks. This is a very traditional vegetable to serve around the holidays. It is available throughout the winter months. It knid of looks like superman celery. To fix it, you remove the strings from the back of the stalks, cut it into serving size pieces and parboil it until it is tender. The cooked cardune can then be dipped in flour, eggs and seasoned bread crumbs before it is fried. Unbelievably delicious, it was my grandmother's specialty. It was also the first thing gone once she set it on the table.
