This traditional Italian vegetable is has a flavor similar to broccoli and is great steamed, stir-fried or cooked with pasta. My grandmother always used to cook it with ziti, a straw-like pasta that is supposed to be the best because it is so difficult to produce. Budding shoots should be harvested just before the flowers open for the best flavor. After cutting, smaller shoots will appear - keep cutting - until steams get too small.
